I can pretty well guarantee you will be shocked after your first bite of deep dish cauliflower crust skillet pizza. Why? Because it doesn’t taste like cauliflower! I don’t know about you, but I was raised on boiled cauliflower…yuck. So when I heard about a cauliflower pizza crust I was skeptical to say the least! After taking my first bite of deep dish cauliflower crust skillet pizza, I completely changed my mind, and the best part was not having a stomach full of dough feeling in the end! Whether it’s a gluten-free flour crust or a regular flour crust, you probably know what I mean; especially if you eat more than one slice. But I would have to say the best part is enjoying the great benefits of eating cauliflower. It contains all the big “B” vitamins, as well as omega-3 fatty acids, vitamin K and a great source of vitamin C.

I have done a lot of research lately on the Anti-Inflammatory Diet. Inflammation in the body is now considered to be one of the leading causes of heart disease. Inflammation is also linked to cancer, strokes, diabetes, arthritis, lupus, fibromyalgia, and celiac to name a few. Cauliflower is an anti-inflammatory vegetable, so all the more reason to try my Deep Dish Cauliflower Crust Skillet Pizza. I would love to hear your comments after you take a bite. Deep Dish Cauliflower Crust Skillet Pizza

Want to enjoy a pizza without the heavy feeling of dough on your stomach? This deep dish cauliflower pizza is a must try. You won't believe its cauliflower!

Ingredients

Pizza Crust

  • 1 Small head of cauliflower
  • 1 cup mozzarella cheese (grated)
  • 3 Medium eggs
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper (freshly ground)
  • 1 tablespoon olive oil

Topping

  • 1 Medium sweet onion (thinly sliced)
  • 10 thin slices pepperoni (organic-no nitrates - cut in strips)
  • 1 cup mushrooms (chopped)
  • 1/2 cup sun-dried tomatoes (in oil-3 Tbsp oil reserved for crust)
  • 1 cup spinach leaves
  • 3oz goat cheese (herbed)
  • 2 tablespoons olive oil (extra-virgin)
  • sea salt & pepper (lightly seasoned over the top)

Optional

  • 1 cup grape tomatoes (halved-optional topping)

Directions

Pizza Crust
Step 1
Crumbled cauliflower bits are ready for the first step in forming the flour-less pizza dough.
Shred cauliflower in a food processor until it resembles rice. Remove from processor and place in a medium sized bowl.
Step 2
Italian seasoning adds just the right spice for creating a perfect cauliflower deep dish crust.
Add eggs, mozzarella cheese, Italian seasoning, salt and pepper. Mix with a wooden spoon until well blended.
Step 3
Form the deep dish crust by molding the mixture a 1/2" thick up the sides.
Rub a 12" cast iron skillet with olive oil. Place pizza crust blend in skillet and form crust with hand, spreading a 1/2" layer up the sides of the skillet and along the base.
Step 4
Place skillet in a 400 degree oven for 15-20 minutes or until sides begin to turn a light golden brown. Remove from oven.
Topping
Step 5
Sautéed thinly sliced sweet onions are a perfect pizza topping..
While pizza crust is cooking, slice sweet onion and saute until translucent. Slice mushrooms and pepperoni.
Step 6
Using the oil from sun-dried tomatoes gives a perfect topping when not using a sauce.
Place 3 tablespoons oil from sun-dried tomatoes and gently brush onto pizza crust bottom.
Step 7
The start of delicious pizza toppings; pepperoni, mushrooms, sautéed onions.
Evenly place pepperoni slices, mushrooms and sautéed onions onto pizza crust.
Step 8
Spinach leaves, sun-dried tomatoes, and goat cheese add the perfect touches to the deep dish cauliflower skillet pizza.
Evenly add spinach leaves, sun-dried tomatoes, and goat cheese.
Step 9
Drizzle lightly with olive oil. Sprinkle with salt and pepper. Place back in 400 degree oven for 10 minutes or until cheese is melted. Slice into eight even pieces and serve hot.
Optional
Step 10
Slice grape tomatoes just before serving for a fresh burst of flavor!
Remove from oven, add sliced grape tomatoes before serving.
