This Paleo Apple Pie Muffins recipe is for all my paleo, gluten-free, dairy-free friends out there. The shredded apple makes for a deliciously moist muffin and the cinnamon, ginger, clove mix adds just the right amount of spice. It’s like biting into the flavor of apple pie in a muffin. I also used honey in place of refined sugar, so they are an all around super healthy muffin!

My hubby and I recently celebrated our 30th wedding anniversary. I know, 30 years! I probably mentioned our anniversary back at the end of July, when the actual date hit, but I know I didn’t mention that we decided to take a Mediterranean Cruise in honor of it. I’ve never been to Europe, so you can imagine, I am beyond excited! Traveling gluten-free in Europe has me a little nervous, but I’ve done a bit of research and it’s calming my fears. One gluten-free site that has been particularly helpful is celiactravel.com There are a lot of helpful hints and tips for traveling abroad but one of the most helpful areas on their website are the Gluten-free Travel Cards.  These travel cards can be found in every language and are a downloadable PDF file. Find the country you will be visiting, open the PDF file and print the information that tells your restaurant server the foods you cannot eat in their language. Be advised this is for celiac and gluten-intolerance, but does not appear to be for dairy-free. We will be visiting Venice, Florence, the Greek isles, Toulon France, Istanbul Turkey, and Barcelona Spain. I’ll try to report back some of the gluten-free foods I find in these areas, so if you ever happen to be traveling there you might have a heads up on where to eat.

I purchased a few nice crisp apples at the farmer’s market last week. In some ways it’s hard to put them into a muffin because the flavor is so bright and crisp when they’re newly picked from the apple tree. But I also love a good moist fall tasting muffin, so I cut off a few slices for myself before shredding the rest for the muffin batter. You can use any varietal, but I happen to especially love Honey-Crisp apples. They are sweet, crisp, and juicy, which make for nice moist paleo apple pie muffins.

Use a cheese shredder to shred your apple and shred the skin as well. There is a lot of good fiber in the skin that you don’t want to miss out on.

Place batter into a muffin tin that is either sprayed with non-stick spray, or use a paper muffin liner. Fill the muffin cups almost full. These muffins will not rise very high.

Paleo Apple Pie Muffins

Ingredients

  • 2 cups Almond Flour (extra fine)
  • 1 Large Apple (any varietal)
  • 3 Large Eggs (preferably cage-free)
  • 1/3 cup Coconut Oil (melted)
  • 1/3 cup Honey (raw)
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Ginger
  • pinch Cloves
  • pinch Nutmeg
  • 1 teaspoon Baking Powder (aluminum free)
  • 1/4 teaspoon salt

Directions

Step 1
Place almond flour, baking powder, cinnamon, ginger, cloves, nutmeg and salt into a large mixing bowl and blend.
Step 2
Using a cheese grater, shred large apple including skin, into a medium size bowl.
Step 3
Add melted coconut oil, eggs, and honey to shredded apple and stir.
Step 4
Place apple mixture into almond flour mixture and blend on medium speed for 3 minutes or until well incorporated.
Step 5
Scoop batter into non-stick sprayed muffin tin or paper muffin covers in tin. Fill almost full.
Step 6
Bake in a 350 degree preheated oven for 16-18 minutes or until muffin is done in center.
