Step 1

Place almond flour, baking powder, cinnamon, ginger, cloves, nutmeg and salt into a large mixing bowl and blend. |

Using a cheese grater, shred large apple including skin, into a medium size bowl. |

Add melted coconut oil, eggs, and honey to shredded apple and stir. |
Step 4

Place apple mixture into almond flour mixture and blend on medium speed for 3 minutes or until well incorporated. |
Step 5
|
Scoop batter into non-stick sprayed muffin tin or paper muffin covers in tin. Fill almost full. |
Step 6
|
Bake in a 350 degree preheated oven for 16-18 minutes or until muffin is done in center. |
