Growing up gluten-free I never had a Christmas cookie, let alone Gluten & Dairy-free Sugar Cookies! Honestly, I didn’t know what I was missing. The simplicity of a sugar cookie is probably what I love the most. I like the fact there are no other competing ingredients such as chocolate chips, raisins, or spices. It’s just simply a yummy cookie all around.
Christmas Memories
Some of my fondest memories of Christmas were helping my mom paint ornaments, decorating the Christmas tree and frosting sugar cookies. Ironic that I loved to frost them but never was able to taste them. I’m sure she wished there was a way to make a gluten-free sugar cookie back in the 60’s & 70’s but it didn’t exist. I just knew not to eat them. I saw them as poisonous because of what they did to my body. I know you can relate!
Rolling Out GF-DF Sugar Cookie Dough
It isn’t always easy working with gluten-free dough. It is often sticky, making it difficult to roll. A few key pointers:
- Chill the dough
- Roll between two sheets of parchment paper
- Place on a silicone cooking pad
- Allow to cool about 5 minutes before moving to a cooling rack
Roll your dough slightly thicker if you like a more puffy cookie, and thinner if you like your sugar cookies crisp. What started out looking like a snowflake ended up looking like a flower, but oh well, they still taste good!
Place the dough on a silicone cookie sheet if you have one. It allows for even baking and the cookies slide right off once you are ready to move them to a cooling rack.
For an easy frosting idea simply sprinkle the dough with red and green sprinkles before baking. Then once the cookies have cooled, simply dust them lightly with powdered sugar using a fine mesh strainer.
Remove the trays and enjoy a little sugar dusting art before you clean the counters!
