This is the greatest hummus recipe ever! Really? Titles like this intrigue me but make me skeptical. You mean THE GREATEST in the history of the world? The earliest known hummus recipes dates back to the 13th century, so this is a pretty big statement saying it is the greatest hummus recipe ever. So went my thoughts as I flipped through the recipes on bon appetit. They claimed Diana’s recipe is the greatest recipe of all time, so of course, I had to try it for myself. I found it easy to make, creamy, and quite delicious with the drizzled olive oil on top and a touch of sprinkled sumac. I generally don’t use sumac in my cooking but I happen to have this spice on hand from purchasing it in Turkey from the Spice Market. Sumac has a slightly natural lemon taste to it, so it compliments the lemony-garlic taste of this hummus.

My assessment of the recipe? It is smooth, light, fresh, with a hint of lemon-garlic running throughout. Would I say it is the best hummus I have ever tasted? It’s right near the top! In fact I liked it so much I thought is was worthy to share on my blog. Normally my blog is only made up of recipes I have created, but if you like hummus, this recipe is worth the minimal effort it takes to make it, and you just might think it is the greatest hummus recipe ever!

The Greatest Hummus Recipe

 

You can soak your own chickpeas over-night, or just purchase a can of organic chickpeas for a quick appetizer that is ready in no time at all. Place the chickpeas in a food processor with some olive oil, fresh garlic, lemon juice, and a pinch of salt, and voila, you have the making for the greatest hummus recipe of all time! Just remember to reserve a few garbanzo beans (chickpeas) to place on top with a sprinkling of sumac for a nice presentation.

The Greatest Hummus Recipe Ever!

Ingredients

  • 1 can Chickpeas (reserve 1 teaspoon of liquid & a few chickpeas)
  • 1/3 cup Olive Oil
  • 1 Medium Lemon (juice from)
  • 1 tablespoon Tahini
  • 1 Large Garlic Clove (chopped)
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Sumac (for garnish)

Directions

Step 1
Drain one can of chickpeas (garbanzo beans) reserving 1 teaspoon of liquid. Set a few chickpeas aside for garnishing at the end.
Step 2
Place chickpeas and olive oil in a food processor and pulse for 10 seconds. Scrape down sides, add lemon juice and tahini. Pulse again to fully incorporate.
Step 3
Add garlic and salt and pulse until creamy smooth. If necessary, add a little more olive oil until you reach a nice, creamy consistency.
Step 4
Spoon hummus into a bowl and swirl with a small spatula or spoon. Garnish with a dash of olive oil, chickpeas and a sprinkling of sumac.
Step 5
Serve with fresh vegetables or gluten-free pita bread.
