The trick to cooking good fish is to not over cook it. Dry fish is not very appetizing. I used tilapia for this recipe, but any white fish such as halibut or mahi mahi, may be substituted, just allow for extra cooking time if the fish is thicker. The little rice cakes are cooked in the round with sesame seeds. Mine fell apart slightly when I plated it, so next time I would use Japanese sticky rice, the same as what you would use for sushi. I think it would hold its shape from the pan to the plate better.

 

Teriyaki Tilapia with Japanese Rice Cakes 

Teriyaki marinade gluten-free
This gluten-free marinade is a sweet tasting teriyaki.
Teriyaki marinated tilapia
Marinade the tilapia in the gluten-free teriyaki sauce for at least two hours.
Rice Cakes with sesame seeds
Use sticky rice to ensure the cakes will stay together during frying process.

Place the rice cakes in melted coconut oil and fry til slightly brown on each side.
Teriyaki Sauce for fish
Use the remaining marinade & mix in 1 tsp of corn or tapioca starch to thicken for sauce.

Place the rice cake on bottom, cooked asparagus spears next, then place the tilapia on top with sauce.

 

Teriyaki Tilapia with Japanese Rice Cakes

Marinade & fish:

4 Tilapia fish

1/2 cup Tamari

2/3 cup rice vinegar

4 gloves garlic (minced)

4 Tbsp honey

1/2 cup olive oil

1 tsp ginger

Place all ingredients except fish in a bowl and mix thoroughly. Divide the marinade in half. Place fish and 1/2 the marinade in a ziploc bag for at least 2 hours in the refrigerator. Reserve the other 1/2 of marinade to make a sauce.

Rice Cakes:

1 cup Japanese short grain sticky rice

1 1/4 cup water

2 tsp rice vinegar

2 Tbsp sesame seeds

1 Tbsp coconut oil (for frying)

 Asparagus:

12 sprigs Aparagus

1 Tbsp olive oil

sea salt

 

Bring water to a boil in a medium saucepan. Add rice and boil for one minute. Reduce to low and place a lid on the pan. Cook for 20 minutes then add the rice vinegar. Form rounded cakes by hand or in English muffin tins. Shake sesame seeds onto rice cakes and set aside.

Remove fish from marinade and place in a glass baking dish sprayed with non-stick spray. Bake in a 350 degree oven for 15 minutes if your fillets are thin, or 20-25 if they are thicker. They are done cooking when the layers can be gently separated with a fork.

I lay my asparagus spears on a cookie sheet, lightly drizzled with olive oil and sprinkled with sea salt. They will cook alongside the fish for aproximately 15 minutes or until the spearheads begin turning slightly brown.

While the fish and asparagus are cooking, prepare the sauce. Take the remaining marinade and place it in a small pan with 1 tsp corn or tapioca starch. Cook until sauce slightly thickens.

Plate the dish with the rice on bottom, asparagus spears next, then lay the fish on top and add the sauce.

This past weekend I attended my daughter’s first baby shower. It is amazing what love I have for this little baby and I haven’t even met him yet! I hear being a grandparent is one the best experiences in life. I can’t wait! Many of the treats provided at the shower were gluten-free. The little chocolate cupcakes came from a mix called Crave. One of the nurses my daughter works with made her the beautiful quilt, and her mother-in-law and I went in together to purchase a Bob stroller, which is en engineering marvel in itself! Our daughter and husband are very blessed to have such wonderful friends. I’m more than excited for this little guy to arrive at the end of August, so I had to share.
