Last weekend my husband and I took a drive after work to Spokane, Washington, to enjoy dinner, stay the night, and take a visit to the Home and Garden Show. Our first stop was at one of my favorite little restaurants along Highway 195, called Latah Bistro. They cater well to gluten-free and the flavors are always outstanding, not to mention the atmosphere. I enjoyed a delicious salmon for the main course and yummy little dark chocolate Mayan Cakes for dessert.
The following morning we made a stop at my favorite coffee house, Couer Coffee House for an amazing cup of brew. This particular morning they were brewing beans from Heart Coffee out of Portland, OR. Rich & creamy, this latte hit the spot!
Next stop was breakfast and a trip to Cole’s Fine Foods, a gluten-free bakery. If you suffer from either celiac or a gluten intolerance, and you live in the Pacific Northwest, Cole’s is a must stop. I sampled a numerous amount of samples, all which were amazingly delicious! Her bread was soft, with excellent texture. I sampled the Angel Food Cake, which my husband informed me taste just like the real thing, as I have never tried Angel Food Cake. But the highlight came when I sank my teeth into the most delicious Maple-Bacon bar! Sinfully delicious but worth every bite, I was like a kid in a candy store. I’m sure my eyes were wide open as I ogled over its yumminess!
Jeanine Smith opened Cole’s Fine Foods, a 100% gluten-free bakery, after converting family recipes to delicious gluten-free products, once one of her family members was diagnosed with celiac. And convert, she did! You can find fresh gluten-free/nut-free granola, gluten-free flours, delicious soft sandwich breads, and French breads. Her baked goods look like you walked into a French Bakery, ranging from cream puffs, lemon bars and Angel Food Cake, to iced sugar cookies and delicious scones. And on Saturday mornings you can find fresh from the oven cinnamon rolls and maple bars! She also carries meals such as gluten-free lasagna and gluten-free mac & cheese.
