There are several gluten free bread products on the market today and new ones seem to be popping up all the time. I was surprised when my husband arrived home from a recent Costco trip with two loaves of gluten free bread! Costco is carrying Super-seeded Multi-grain from the The Essential Baking Company. They are located in Seattle, WA, and make their bread in a dedicated wheat-free, gluten-free, dairy-free, peanut free, tree-nut free and kosher certified facility. I found the bread to be hearty and delicious. The inside was soft, while the crust remained firm but not dry. It is excellent toasted and makes a great sandwich, too. The bread does not crumble easily, an added bonus for gluten free bread! The use of several seed nuts gives it an overall rich, hearty taste. Costco only offered one variety to my knowledge, however, The Essential Baking Company also makes Gluten Free Seeded Cinnamon Raisin, Gluten Free Sunny Seeded White, and Gluten Free Super Seeded Multi-Grain Rolls. Their bread products are available for sale at many grocery store and small markets throughout the State of Washington. Hopefully they will roll out nationwide. It truly is a delicious slice of gluten free goodness.

I had an old loaf of bread (another gluten free brand, set aside when the Essential Baking Company bread came along) that had been in my refrigerator about a week too long, so instead of throwing it out, I decided to make croutons. This is a delicious way of using slightly stale bread, especially when gluten free bread is so costly. Croutons take less than a half hour to make and will store in an airtight container in the refrigerator for up to one week or in the freezer for up to three months.
Cut bread into roughly 1-inch cubes.
Melt butter and add herbs & salt. In a large bowl, pour butter & herbs over the bread and toss until evenly coated.
Place coated bread cubes onto a large cookie sheet and distribute evenly. Place in a 350 degree oven for 15 minutes.
Sprinkle the tops of the croutons with freshly grated parmesan cheese and continue baking for another 10 minutes
or until croutons are a golden brown.
Gluten free yummy croutons are delicious atop a fresh salad or in a warm bowl of soup. Enjoy!
Gluten Free Buttery-Herb Croutons
6 cups 1-inch cubed Gluten Free Bread
1/2 cup (1 cube) Melted Butter
1 tsp. Italian Seasoning
1/2 tsp. Garlic Powder
1/2 tsp. Celery Salt
1/2 tsp. Salt
1/4 cup Freshly Grated Parmesan
