How to Make Grain-free Vanilla Bean & Wild Honey Mug Cake

With just five ingredients, which you may already have at home, you can whip this together in no time at all. It makes a yummy little afternoon snack, or a perfect last-minute dessert. Just add almond flour, egg, ghee (or butter), honey, and vanilla. Yep, that’s it! Pretty darn easy.

It’s also the perfect dessert if you have unexpected guests drop by. Throw the ingredients in a mug, into the microwave for 2 minutes and serve. And I’m not kidding, it tastes really good!

It should rise slightly in a dome shape when finished but still have a fluffy cake texture on the inside. Your mug cake will have a texture of an oven baked cake; soft, slightly spongy, and oh so delicious!

Are you dying for spring like I am? It is March and we are still covered in a blanket of winter snow. We now have had snow on the ground for nearly five months! Spring can not come soon enough. I recently visited the Seattle Flower and Garden Show. It has certainly given me the itch to get out in my garden again. We came home and started our seeds for spring planting. Now, if only spring would arrive! I love digging in the dirt. There is something very therapeutic about growing my own food. Clean and healthy without the pesticides.

A quick and delicious way to enjoy dessert is creating a five minute Grain Free Vanilla Bean with Wild Honey Mug Cake. Serve it with your favorite topping and enjoy!


  • 1/4 cup Almond Flour (+ 2 Tablespoons additional almond flour)
  • 1 Large Egg
  • 2 tablespoons Wild Honey
  • 1/2 piece Vanilla Bean Pod (sliced open and beans scraped out, or 1/8 tsp liquid vanilla)
  • 2 teaspoons Ghee or Butter (melted)


Step 1
Mix all ingredients together in a coffee mug.
Step 2
Microwave mug no longer than 2 minutes on high, or until cake looks dome shaped and spongy, Do not over cook!
Step 3
Enjoy with toppings such as fresh fruit, drizzled caramel, whipped cream, or just plain!

  1. Oh my goodness – so delicious! Your recipe was an answer to my prayers (I’ve been asked to avoid soy, dairy, gluten, starches and baking powder and baking soda). Made this twice and added a handful of frozen raspberries the second time. Both were delicious! Thank you again 🙂
