I have never been a huge cauliflower fan, maybe because my mother always boiled it in water and served a mushy head of white brains, as I always saw it. It wasn’t until my adulthood that I actually started enjoying cauliflower, especially baked. My husband has always thought of cauliflower as a vegetable you need to cover up to make it taste good, like a whole lot of aoli or mustard sauce just to choke it down. So when I had him taste these baked little sensations of Manchego & Roasted Garlic Cauliflower Bites, he surprised me as he battled for the last bite!

The Manchego and olive oil create a nice crispy edge on many of the cauliflower bites. They are small enough to eat as a snack, similar to tossing popcorn in your mouth but with much added nutrition. Read HERE to find out all the benefits cauliflower provides your body.

Again, while attending IFBC and the Kitchen Aid/Sur La Table excursion, I received a package of Manchego & Roasted Garlic Seasoning for use on Cauliflower. It really is delicious! And Sur La Table is offering a buy two get one free on their website! They do offer a number of different spice packets, but check the labels carefully because not all are gluten-free. This particular packet is gluten-free but not dairy-free, so I’m sorry to all my dairy-free friends out there. The Manchego cheese, of course, rules it out. It also calls for butter to be used in the recipe, which I omitted in order to cut down on the dairy. The flavor was still delicious with just the olive oil. If you have flavored oils, such as caramelized garlic olive oil, or a Tuscan herb oil, you may want to experiment with those as well.

The seasoning packet contains enough to season three pounds of vegetables. I even tried it on a combination of cauliflower, broccolini, and butternut squash and it was truly yum, so you don’t have to limit yourself to just cauliflower.

But whatever you choose to add this delicious Manchego & Roasted Garlic spice mix to, whether it’s veggies for your Thanksgiving table or simply small cauliflower bites for snacking, I guarantee you will be fighting over those last little nibbles!
