Quick & Tasty
I tried Modern Table meals for the first time a little over a month ago at Costco. Modern Table Meals was started by a group of busy moms who wanted to bring healthy and easy meals that taste yummy to everyday life, and that is exactly what they did. Their Modern Table Meal packets include gluten-free bean and lentil noodles, vegetables and seasoning packets. They produce six different meal packages, which are all gluten-free except the teriyaki, although I did hear they are working on producing a gluten-free teriyaki meal and it should be on the market by 2017. The only packet to date that is gluten & dairy-free is their Southwest Bean Pasta and Veggie Kit with Lentil Rotini Noodles. They also carry just the pasta noodles in smaller packets, which are gluten & dairy-free.
I have currently tried the Pesto and the Mac & Cheese (my personal favorite so far) varieties. The noodles are made from a combination of green lentil flour and oat fiber. Lentils are near and dear to my heart, as I have lived in the once lentil capitol of the world. That role has currently moved to the state of Montana, the largest producers of lentils, however, we have the only Lentil Festival I know of in the world. Less than 15 Minutes!
This Pesto Bean Pasta and Veggie Kit that I’m posting images of comes with lentil penne pasta noodles, carrots, peas, pesto sauce, and a citrus herb seasoning packet. The instructions say to boil the noodles for 8-9 minutes but I found them too al dente and cooked them for an extra minute or two. The pesto sauce needs water and olive oil to be added to the powdered packet before stirring into the noodles. Toss and let the noodles sit for two minutes to allow the flavors to immerse, then add the citrus herb seasoning on top.
The meal goes together in less than 15 minutes, so if you are a busy mom on the go, or like me, tired from a long day at work and need to put a tasty meal on the table quick, I give Modern Table Meals a thumbs up!
