Gluten & Dairy-free Sugar Cookies
You can enjoy a sugar cookie even if you are gluten & dairy-free. Sprinkle them with sugar or use your favorite frosting, either way, you can enjoy Christmas cookies just like your friends!
Ingredients
- 5 tablespoons Earth Balance Vegan Butter
- 3 tablespoons Coconut Oil
- 1 cup Granulated Sugar
- 1 Large Egg (room temperature)
- 2 teaspoons Pure Vanilla Extract
- 1 cup White Rice Flour (super-fine)
- 1/2 cup Potato Starch
- 1/4 cup Tapioca Starch
- 1/4 cup Sweet Rice Flour
- 1/4 cup Sorghum Flour
- 1/2 teaspoon Baking Powder
- 1/4 teaspoon Sea Salt
- 5 tablespoons GF flour blend (for rolling dough)
- Sugar Sprinkles (for topping)
- Powdered Sugar (for dusting)
Note
*Replace all flour in the recipe for 2 1/4 cups of your favorite gluten-free flour blend if you desire.
Directions
Step 1

Preheat oven to 350 degrees. |
Step 2

In the bowl of an electric mixer fitted with a paddle attachment, cream the vegan butter, coconut oil, and sugar until smooth, about 2 minutes. Turn mixer to low and add the egg, and vanilla extract. Mix until thoroughly combined. |
Step 3

In a separate large mixing bowl, whisk together the all flours, baking powder and salt. |
Step 4

Turn the mixer to low and add the flour mixture to the butter mixture and mix well. Shape the dough into 2 balls and flatten with your hand. Wrap with plastic wrap and refrigerate for at least 1 hour. |
Step 5

Line baking sheets with either parchment paper or silicon baking mats. |
Step 6

Place parchment paper on a flat work surface. Lightly sprinkle with a gf flour blend, place one dough disk on top, sprinkle that with some flour blend and top with another piece of parchment paper. Roll dough to a thickness of about ¼ inch or 1/2 inch if you prefer thicker cookies. |
Step 7

Cut cookies into desired shapes using cookie cutters and place on prepared pans spacing about 1 inch apart. Brush off any excess flour. Sprinkle the cookies with sugar before baking. Repeat with remaining dough. |
Step 8
|
Bake 8-12 minutes depending on desired thickness. Do not over-brown the cookies. |
Step 9
|
Cool at least 5 minutes before placing on a wire rack. |
Step 10
|
Once cookies have cooled, lightly dust them with powdered sugar using a fine mesh. |
