Gluten and Grain Free Chocolate Fudge Cookies
If you love gooey chocolate anything you'll love these gluten free and grain free chocolate fudge cookies. Free of gluten, grains, dairy, & refined sugars!
Ingredients
- 3/4 cups Allergy Free Chocolate Chips (I used Enjoy Life brand)
- 2 tablespoons Coconut Oil
- 2 Large Eggs (room temp- may also substitute flax or chia eggs)
- 1/4 cup Pure Maple Syrup (or honey)
- 1 tablespoon Pure Vanilla Extract (yes, tbsp!)
- 1/2 cup Blanched Almond Flour
- 1/4 teaspoon Sea Salt
- 1/4 teaspoon Baking Powder
- 3/4 cups Allergy Friendly Chocolate Chips (mega chunk or mini Enjoy Life brand)
- 1 1/2 cup Walnuts (chopped, or other nuts such as pecan or hazelnut)
Directions
Step 1

Preheat oven to 350 degrees. |
Step 2

In a medium saucepan, melt coconut oil and mini chocolate chips over low heat. Once melted, remove from heat. |
Step 3

Using a mixing bowl, combine eggs, maple syrup, and vanilla. Whip until fully incorporated. |
Step 4

Whisk in almond flour, chopped nuts and chocolate chunk pieces. |
Step 5

Scoop batter, one tablespoon at a time, onto parchment paper covered cookie sheet, or a silicone pad. |
Step 6

Bake at 350 for approximately 12 minutes. Cool on cooling rack. |
Step 7
|
Store in an airtight container in the refrigerator. Dough may be frozen for up to one month. |
