If you love gooey chocolate anything you may want to run to your kitchen right now and try these gluten free and grain free chocolate fudge cookies. They are truly yummy to the last bite! Free of gluten, grains, dairy, and refined sugars, they may soar to the top of one of your favorite cookies. The batter freezes well, so baking up a fresh cookie every now and then makes a nice sweet treat without the temptation of two dozen cookies staring back at you! The batter may fool you, as it comes out more gooey than most cookie dough; more along the lines of thick brownie batter. But they cook up as a firm but soft cookie with a decadent, melt in your mouth fudge center.

Chocolate Fudge Cookie Bite

Enjoy Life makes mini semi-sweet chocolate chips that are Gluten, Dairy, Nut & Soy Free and Vegan! They are delicious and I find it a little too easy to nibble on the contents of the bag throughout my baking! Recently I found that they carry a large chocolate chunk variety with the same allergy friendly ingredients. I used both the mini and large chunk chocolate chips in this chocolate fudge cookie recipe. Coconut is substituted where butter would usually be and the chocolate overwhelmingly disguises the coconut flavor if you’re not a big fan.

Allergy-free Chocolate Chips

Maple syrup is used in place of conventional refined sugar. Just add a couple of eggs at room temperature and a bit of vanilla. If you can’t handle eggs, you can always make flax or chia eggs instead.

Making Chocolate Fudge Cookies

Add in the melted chocolate chips and coconut oil, or as I like to call it, “the fudginess”. Whip until fully combined.

Adding a few more ingredients like almond flour and nuts and voila! You have the making of one delicious gluten free and grain free chocolate fudge cookie! Just be aware, the dough is going to appear very gooey. Do not be tempted to add more almond flour! And another note, you cannot roll this dough, so using a cookie scoop or soup spoon is preferred. The dough will be consistent with a thick brownie batter.

Ingredients

  • 3/4 cups Allergy Free Chocolate Chips (I used Enjoy Life brand)
  • 2 tablespoons Coconut Oil
  • 2 Large Eggs (room temp- may also substitute flax or chia eggs)
  • 1/4 cup Pure Maple Syrup (or honey)
  • 1 tablespoon Pure Vanilla Extract (yes, tbsp!)
  • 1/2 cup Blanched Almond Flour
  • 1/4 teaspoon Sea Salt
  • 1/4 teaspoon Baking Powder
  • 3/4 cups Allergy Friendly Chocolate Chips (mega chunk or mini Enjoy Life brand)
  • 1 1/2 cup Walnuts (chopped, or other nuts such as pecan or hazelnut)

Directions

Step 1
Preheat oven to 350 degrees.
Step 2
In a medium saucepan, melt coconut oil and mini chocolate chips over low heat. Once melted, remove from heat.
Step 3
Using a mixing bowl, combine eggs, maple syrup, and vanilla. Whip until fully incorporated.
Step 4
Whisk in almond flour, chopped nuts and chocolate chunk pieces.
Step 5
Scoop batter, one tablespoon at a time, onto parchment paper covered cookie sheet, or a silicone pad.
Step 6
Bake at 350 for approximately 12 minutes. Cool on cooling rack.
Step 7
Store in an airtight container in the refrigerator. Dough may be frozen for up to one month.
